Critical Violations Found: 6

  1. Not all potentially hazardous foods are reheated to 165 degrees when rice pilaf was 130 degrees on steam table shortly after being reheated. Discarded.
  2. Not all potentially hazardous foods are held @ 41 degrees and below when cooked rice and hollandaise sauce was sitting out at room temperature waiting to be reheated: Temperatures: 52 and 59 degrees-discarded.
  3. Bleach in wipe cloth bucket >200ppm. Stored on shelf of cart over ready to eat food. Moved so it is below food.
  4. Utensils in storage area contain food debris from raw meat slicer. Manager states these items are not in use. Advised to remove any equipment no longer in use from the premise. "Clean" knives in container with stagnant water and dead fly. All removed for cleaning.
  5. Soda gun nozzels contained mold. Soaking in water alone without taking them apart will not clean them.
  6. No working handsink in basement prep and dishwashing area. Sink was completely removed from dishroom and sink in prep area had no cold water and no papertowels. Employee stated he washed his hands upstairs. Cold water at handsink restored, papertowels replaced.
