* Cook failed to wash hands prior to putting on gloves and handling ready-to-eat foods. Reviewed issue with owner at the time of inspection. (Repeat)
* Not properly date marking all ready-to-eat potentially hazardous foods. The open package of cooked brisket in the reach-in cooler was not date marked. The brisket was discarded at the time of inspection. (Repeat)
* Several dishes being stored unclean in the kitchen area. Properly wash, rinse and sanitize all unclean dishes and utensils.
* Can opener blade was unclean with excessive dried food debris when required to be cleaned and sanitized within 4 hours of use with a potentially hazardous food.
* Chemical bottles in kitchen area with no label. Properly label all containers used to store chemicals.
