Discussed properly covering employee drinks and storing mops so can air-dry.

- Employee found not washing hands between dirty cleaning duties and unloading clean dishes from dishwasher.
- Raw shell eggs stored above ready-to-eat foods and egg stored inside of fresh cut peppers/onions. Repeat violation. Corrected by discard and relocation of eggs.
- Pasta, Alfredo sauce and other potentially hazardous, ready-to-eat foods not date-marked in make-table and upright coolers. Repeat violation. Corrected by labeling.
- Cooked pastas in walk-in cooler found held past discard date marked on product. Corrected by discard of food.
- Several #10 cans of food found with severe dents, product considered damaged. Corrected on site.
- Flour bin interior and meat slicer found with moderate build-up of food/dirt debris; must clean frequently.
- Knives, tongs and food prep dishes found with debris build-up on grill-line and back prep area. Repeat violation.
- Wiping cloths with debris build-up used to wipe cutting boards and food prep areas without sanitizing solution; must sanitize food contact surfaces with 50-100ppm chlorine solution.
