Critical Violations Found: 5

  1. Employees observed eating in kitchen area. Food items were removed and issue was discussed with management at the time of inspection. (Repeat Violation)
  2. Not properly cooling a potentially hazardous food. The cooked chicken being held at room temperature read over 90 degrees F when required to be cooled down to 70 degrees F within 2 hours and to 41 degrees F within the next 4 hours.
  3. Not properly cold holding a potentially hazardous food. The raw shell eggs at the cook line read 61 degrees F and the Oyster Sauce on the cook line read 65 degrees F when required to be held at 41 degrees F or below. The eggs and the oyster sauce was discarded.
  4. Several utensils found being stored unclean. Properly wash, rinse and sanitize all unclean utensils.
  5. Meat slicer was not clean with excessive dried food debris. Meat slicer is required to be properly cleaned within 4 hours of use with a potentially hazardous food. Properly clean and sanitize the meat slicer.
