Basic Chicken Salad


  • Leftover chicken - shredded or diced
  • Salad greens of your choice - romaine, bib lettuce, spinach, etc.
  • Chopped vegetables of your choice - tomatoes, peppers, onions, cucumbers, etc.
  • Shredded cheese of your choice (optional)
  • Balsamic vinaigrette dressing (or other salad dressing of your choice)


  1. Plate salad greens and top with vegetables, chicken and cheese if desired.
  2. Add dressing, or place dressing in a small bowl and dip fork times before each bite of salad to cut calories.
