your choice of toppings - shredded lettuce, diced tomatoes, salsa, etc.
Thinly slice chicken and vegetables.
Season chicken with seasonings.
Heat oil in a 12 inch skillet over medium-high heat to just smoking. Add chicken and sauté until cooked through (meat thermometer inserted into thickest piece should read 165°F) and lightly browned, about 5 minutes.
Remove to bowl and keep warm.
Add peppers and onion to skillet and cook for about 5 minutes, stirring only once or twice, until spotty brown.
Return chicken to skillet; stir and heat through.
Spoon mixture into tortillas and top with your favorite toppings!
