Chicken Fajitas


  • 16 oz boneless skinless chicken breasts
  • 2 cup thinly sliced onion
  • 2 cup thinly sliced bell peppers (any color)
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tsp dried parsley flakes
  • 1/2 tsp paprika
  • 1 tsp salt (optional)
  • 1 tbsp canola oil
  • tortillas
  • your choice of toppings - shredded lettuce, diced tomatoes, salsa, etc.


  1. Thinly slice chicken and vegetables.
  2. Season chicken with seasonings.
  3. Heat oil in a 12 inch skillet over medium-high heat to just smoking. Add chicken and sauté until cooked through (meat thermometer inserted into thickest piece should read 165°F) and lightly browned, about 5 minutes.
  4. Remove to bowl and keep warm.
  5. Add peppers and onion to skillet and cook for about 5 minutes, stirring only once or twice, until spotty brown.
  6. Return chicken to skillet; stir and heat through.
  7. Spoon mixture into tortillas and top with your favorite toppings!
